The Holiday Drink – How to Make It

We present a simplified take on a cocktail from a new drinks list. It's a batch prepared mix which is bursting with flavours associated with holiday season, which makes it excellent for hosting a holiday party. Reserve the remaining cordial you can use for brunch beverages, puddings, or to make additional servings of bikinis.

The Bikini Cocktail

Makes enough for 10 people

Ingredients for the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

Ingredients for the Drink (yields 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

Making the Syrup: Combine all the ingredients into a saucepan, heat until it reaches a gentle boil, mixing to dissolve. Then, take off the stove allowing it to reach room temperature fully. Decant to a clean bottle, close it keeping it chilled, where it will keep for around a month.

To make Cocktail Base: Mix every liquids into a big jug, allow it to infuse for 60 minutes, then pass it through preferably using cheesecloth, to ensure it's fully clarified.

For serving: Measure 85ml of the batch mix into your stirring glass packed with ice, and agitate gently for a minute until cold. Filter to a chilled martini glass or equivalent, top with a few cranberries and complete it using a light spray of the essential oil over the drink.
